blintze noun[ C ] US(alsoblintz)uk /blɪnts/ us /blɪnts/ a thin pancake (= a thin, round cake made in a frying pan from a mixture of flour, milk, and egg), usually filled with cheese or fruit, folded, and then fried in butter or baked : Place the blintzes in the pan with the folded-over edge down and fry them over a medium heat until they are golden brown. Nowadays, blintzes may be filled with anything from puréed walnuts to spinach. Stack the cooled blintzes between sheets of baking paper. "Blintz" comes from the Yiddish word "blintze" — an Ashkenazi Jewish dish consisting of a thin pancake wrapped around savoury or sweet filling.
