sambar noun[ U ] uk /ˈsæm.bɑːr/ us /ˈsæm.bɑːr/ a dish made with lentils (= very small dried beans that are cooked and eaten) that is popular in South India and Sri Lanka: Serve the dosa with piping hot sambar and coconut chutney. Lunch and dinner typically include rice, two vegetables and a spicy lentil dish called sambar. The vegetables added to the dal give a different taste to the sambar. Make sure that the tamarind juice is thick because that is what decides how thick your sambar will be. Idli hot from the steamer and a bowl of spicy sambar is one of my favourite dishes.
