samp noun[ U ] USuk /sæmp/ us /sæmp/ dried maize(= the yellow seeds of a tall plant) that is boiled and eaten: 玉米糁(煮粥食用) He boiled up some samp and a few scraps of meat. Early American settlers often kept a mill for grinding samp. They each got a plate of sausages served with samp and beans. The samp mill was used to turn dried corn into a coarse meal for making porridge. When they were making samp, they did not have to grind the corn as finely as they did when they made bread.
